Lentil Dumplings in yogurt
Ingredients Required Quantity & Preparation
Yogurt, Plain 2½ cups /500g, sieved through muslim cloth and make it cold
Ghee /Oil 3 cups /500g, for frying
Sugar, powdered 1 tablespoon, heapful
Shan Dahi Bara Mix one packet
STEPS OF COOKING
1. Mix one cup of lukewarm water in Shan Dahi Bara Mix to make a smooth batter. Set it aside for 15 -20 minutes.
2. In hot Ghee/Oil pour few tablespoons full of batter. Fry till light golden. Remove from oil and spread. Allow the dumplings to cool for few minutes.
3. Refry the dumplings in hot ghee/oil until golden and remove from ghee/oil. Spread to cool for few minutes. Then soak in lukewarm water for 10-15 minutes. Drain the water and gently squeeze out the excessive water.
4. Add powdered sugar to the cold yogurt and stir to completely dissolve the sugar. Then add the dumplings.
SERVING SUGGESTION: Garnish with shan Dahi Bara Chaat Spice Mix.
TIPS FOR BEST RESULTS: * If the Dahi Baras become hard or have a hard core inside, then before ading to the yogurt boil them in water until soft. * Fried Dumplings can be stored in Deep Freezer and used by putting in boiling water.
